One Family Recipe Two Decades on the Dum
Ya Rahman began in 2003 as a small family kitchen in Medavakkam. The recipe came first — a Hyderabadi-style dum biriyani perfected at home long before it ever had a signboard. The first customers were neighbours. Then their neighbours. Then, somehow, most of Chennai.
Twenty-three years on, the method hasn't changed. Aged basmati, meat that arrives fresh every morning, whole spices ground in our own kitchen, and a handi sealed with dough and left alone on the dum until it's ready. If a batch isn't right, it doesn't leave the kitchen — simple as that.
